Macaroni and MANY Cheeses

INGREDIENTS
  • 16 oz box elbow macaroni
  • 1/2 cup (1 stick) butter, melted
  • 1/2 cup shredded Muenster
  • 1/2 cup shredded mild cheddar
  • 1/2 cup shredded sharp cheddar
  • 1/2 cup shredded Monterey jack
  • 2 cups half and half
  • 2 large eggs, lightly beaten
  • 4 oz (1 cup) Velveeta cheese, cubed
  • salt and pepper to taste
DIRECTIONS
  1. Preheat the oven to 350°. Spray a 2 1/2 qt baking dish with cooking spray. Set aside.
  2. Cook pasta according to package. Drain well. In a large bowl, mix pasta with melted butter,half and half, 1 1/2 cups of the cheese, Velveeta and eggs. Mix and add salt and pepper to taste. Pour mixture into prepared dish and top with remaining half cup of shredded cheeses. Bake 30 minutes, or until hot and bubbling.
