Madi's Caesar Salad

  • 2/3 cup Hellman's mayo
  • 4-6 T lemon juice
  • 6 T parmesan
  • 1/2 t Worcestshire sauce
  • 1/2 t coarse salt
  • 1/4 t black pepper
  • 1-2 Heads of washed Romaine cut into bite size
  • (optional cooked chicken, left over flank strip, broiled shrimp)
  • Croutons
  1. Large bowl, whisk together first 6 ingredients. Drizzle to your liking. Add toppings. Can be used for dip, grilled chicken sauce, anything really. If too thick, add drops of water until you reach your preferred consistency. Enjoy!
When Madi was a toddler I tried a "raw egg yolk" caesar dressing recipe with anchovies etc. She devoured it but her face broke out in hives. Thinking it was either the raw eggs or the fish, I tried a simpler recipe from an old Martha Stewart 5x7 sized "Food" publication I used to get in the mail. I tore this out 15 years ago and now all my kids love it...with or without the romaine;)
