Mandarin Orange Chicken And Rice
  • 3/4 lb Tyson Popcorn Chicken, Or Make
  • Your Own If You Have Time
  • 1 can Mandarin Oranges
  • 1 cup Uncooked White Rice
  • 2 Garlic Cloves, Minced
  • 1/2 cup Juice From Mandarin Oranges
  • 1/2 cup Orange Juice
  • 1/2 cup Sugar
  • 2 Tbsp Soy Sauce
  • 1 Tbsp Cornstarch
  • 1 Tbsp Vinegar
  • 1/2 Tbsp Olive Oil
  • 1 tsp Parsley
  • 1/2 tsp Ginger
  1. Oven Temperature: 400°F
  2. *Preheat oven to 400 and Spread chicken on a baking sheet foiled and coated lightly with non- stick spray
  3. *Bake approximately 15 minutes, until warm and crispy (while chicken cooks make sauce as directed below)
  4. *In a pan boil water for rice; cook according to package directions
  5. *In a separate pan, heat 1/2 tsp oil on medium-high heat; add garlic and cook until just golden
  6. *Pour in the orange juice, soy sauce, vinegar, and water; bring mixture to a boil and then add sugar and ginger
  7. *Drain mandarin oranges over a bowl, set fruit aside; mix 1/2 cup mandarin orange juice with 1 Tbsp cornstarch until dissolved
  8. *Add mixture to the sauce pan and continue cooking on medium heat until sauce thickens
  9. *Remove chicken from oven and put in large bowl; add mandarin oranges and pour over the sauce; toss to coat everything
  10. *Mound rice and serve topped with chicken; sprinkle parsley, if desired
