Mango Fool
  • Servings: 6
  • 3 Cups mango purée
  • 1 Tablespoon lime juice
  • 1/2 Cup sugar
  • 3 Tablespoons Barbados rum
  • 3 Cups stiffly whipped cream, chilled
  1. 1.Season the msngo purée with sugar and lime juice.
  2. Chill thoroughly.
  3. 2. Add the rum to the whipped cream.
  4. 3. Just before serving fold in the whipped cream mixture.
  5. 4. Blend lightly so that the mixture is not quite uniform in appearance, but has discernible streaks of cream and mango. Serves 6.
  6. NOTE: Omit the rum if you serve it to children.
This recipe originated and is popular in the beautiful English speaking islands of the Caribbean, especially Barbados.
