Mango Margarita
  • 1 Large Mango, peeled and diced (reserve 2 slices with skin for garnish)
  • 1/4 cup fresh squeezed lime juice
  • 4 ounces tequilla
  • 1 ounce Cointreau
  • 2 tablespoons sugar
  • About 1 and 1/2 cups ice cubes
  1. In a blender, combine mango and lime juice, blend until smooth.
  2. Add the tequila, Cointreau and sugar; blend until combined.
  3. Add the ice and blend until smooth and very thick.
  4. Add additional ice if the mixture is not thick enough.
  5. Serve in chilled margarita glasses and garnish each with a slice of mango.
I'm a margarita girl..what can I say. I've also used raspberries before 1/2 to 3/4 of a pint depending on the ripeness.
