Mango Mix

  • 2 Tommy Atkins type mango
  • 2 red pepper
  • 1 cucumber
  • 1/2 red onion
  • 1 c chopped cilantro
  • 2 Tbs rice wine vinegar
  • 1 Tbs tumari or soy sauce
  • 1 quick dash of crushed red pepper
  1. Peel the mango with a potato peeler (seems the easiest way) and cut around the pit. Optional to peel and de-seed cucumber. Chop all the remaining ingredients and put all of it a bowl. Add vinegar, soy/tumari and red pepper.
  2. Let sit for 15 minutes. This is a good time to prepare your favorite protein if you want to add it. I recommend.
  3. Serve with protein over rice, quinoa or couscous.
