- I like to grill chicken and fish all year long. I developed this recipe as a zesty side dish. It's easy, beautiful and always gets raves. Also great served with chips at summer BBQs. Can be made the day before, just gets better when flavors blend.

- I like to grill chicken and fish all year long. I developed this recipe as a zesty side dish. It's easy, beautiful and always gets raves. Also great served with chips at summer BBQs. Can be made the day before, just gets better when flavors blend.
- Ingredients:
- 3 cups chopped mango (slightly crisp not over ripe)
- 1 medium red onion finely chopped
- 2-3 jalapeno pepppers seeds removed, finely chopped(2 grn, 1 red, red are milder)
- 1 tbsp fresh ginger finely chopped
- 1/3 cup fresh cilanto lightly chopped
- 1 1/2 tsp extra virgin olive oil
- Mix ingredients together in a plastic container with tight lid. Turn upside down to thoroughly mix with oil. Let flavors blend for 1 hr. Ready to serve.
