Mango kale salad

  • 1 large bunch kale, stems removed, leaves roughly chopped
  • 1/2 teaspoon coarse salt, divided
  • 4 tablespoons lemon juice, divided
  • 3 tablespoons olive oil, divided
  • 1 tablespoon honey
  • 1/4 teaspoon pepper
  • 1 – 2 mangos (depending on size), chopped
  • 1/2 cucumber(sliced)
  • 1/2 cup dehydrated strawberry chips
  1. 1.In a large bowl, combine kale, 1 tablespoon olive oil, 1 tablespoon lemon juice, and 1/4 teaspoon salt. Massage the kale until it begins to wilt and a darker color develops.
  2. 2.In a small bowl, whisk together the remaining lemon juice, salt, olive oil, honey, and pepper. ( for the dressing)
  3. 3. top the salad with diced mangos, dehydrated strawberries, and cucumber
  4. 4. Serve and enjoy!
This recipe is amazing and overall perfect! The best part of this whole kale salad thing? They don’t wilt (because they’re already wilted), which means that they hold up for several days in the fridge. They’re perfect if you want to make salads for lunch during the week, but don’t want to make a fresh one each day. Plus, kale is super filling and loaded with healthy stuff like calcium and fiber.
