Mango or Pineapple Salsa

- Preparation Time: 10-15 minutes
- 2 mango or 1 pineapple, ripe, peeled, pitted or cored, and finely diced to equal about 1 1/2-2 cups.
- 1/2 small red onion, finely chopped
- 1 sweet red pepper, chopped
- 1 jalapeno, minced (use less or more to taste)
- a bunch of cilantro, chopped (leaves only)
- 3-4 T. lime juice (about 2 limes)
- freshly ground sea salt
- freshly ground pepper
DIRECTIONS
- Put mango, pineapple, or a combination of both in a bowl. Add onion, red pepper, jalapeno, cilantro, and lime juice. Stir well. Season with freshly ground salt and pepper to taste. Refrigerate until ready to serve.
