Mango or Pineapple Salsa
  • Servings: 4-6
  • Preparation Time: 10-15 minutes
  • 2 mango or 1 pineapple, ripe, peeled, pitted or cored, and finely diced to equal about 1 1/2-2 cups.
  • 1/2 small red onion, finely chopped
  • 1 sweet red pepper, chopped
  • 1 jalapeno, minced (use less or more to taste)
  • a bunch of cilantro, chopped (leaves only)
  • 3-4 T. lime juice (about 2 limes)
  • freshly ground sea salt
  • freshly ground pepper
  1. Put mango, pineapple, or a combination of both in a bowl. Add onion, red pepper, jalapeno, cilantro, and lime juice. Stir well. Season with freshly ground salt and pepper to taste. Refrigerate until ready to serve.
Mango or Pineapple Salsa is wonderful with grilled meat.
