Maple Baked Chicken & Vegetables
  • 4 Boneless, Skinless Chicken Breasts
  • 1 Tbl. Vegetable Oil
  • 3 Cups cut-up Root Vegetables (I use Potatoes & Carrots)
  • 1 Onion, quartered
  • Salt & Pepper to taste
  • 1/2 Cup Chicken Broth (canned is fine)
  • 1 Tbl. Butter
  • 1/3 Cup REAL Maple Syrup
  1. Grease Casserole (9X13 works well) and place Chicken inside. Brush with Vegetable Oil and add Root Vegetables & Onion around the Chicken. Sprinkle Salt and Pepper to taste over all, and pour Chicken Broth over Vegetables. Bake 20 Minutes at 425 degrees Farenheit. Melt Butter and add to Maple syrup. Brush over Chicken and Vegetables, reserving some of the mixture. Bake for about another 1/2 hour, basting again after 15 minutes.
Please be sure to use REAL Maple Syrup...the fake stuff is just ickky and not worth the effort.
