Margarita Brownies

  • Brownie:
  • 6 (1 oz.) sq. unsweetened chocolate
  • 1 cup butter, softened
  • 3 cups sugar
  • 6 large eggs, slightly beaten
  • 2 cups all-purpose flour
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 2 tsp. real vanilla
  • Margarita Topping:
  • Zest of 1 lime
  • 1/2 cup fresh lime juice
  • One 14-ounce can sweetened condensed milk (not evaporated)
  • 2 Tbsp tequila
  • 2 Tbsp Triple Sec
  • 1-1/2 cups whipped heavy cream, divided
  • 2 drops green food coloring (optional)
  • 4 very thin lime slices cut in half, for garnish
DIRECTIONS
  1. Brownies:
  2. Preheat oven to 350 degrees.
  3. Spray a 13 x 9 inch baking pan with non-stick spray.
  4. Melt chocolate squares over double boiler until melted.
  5. Combine butter, sugar and eggs; mix until well blended.
  6. Set aside.
  7. Add chocolate and mix well.
  8. Combine flour, baking powder, salt,; add to chocolate mixture, mixing well.
  9. Stir in vanilla.
  10. Spread into pan.
  11. Bake 40 minutes; remove from oven.
  12. Cool thoroughly.
  13. Topping:
  14. In a clean bowl, combine lime zest, lime juice, condensed milk, tequila, and Triple Sec.
  15. Fold in 1 cup of the whipped cream and the food coloring.
  16. Pour over cooled brownies and freeze for 4 hours. Cut into 2 inch pieces and decorate with remaining 1/2 cup of whipped cream and lime slices.
  17. Serve.
