Margarita Brownies

INGREDIENTS
- Brownie:
- 6 (1 oz.) sq. unsweetened chocolate
- 1 cup butter, softened
- 3 cups sugar
- 6 large eggs, slightly beaten
- 2 cups all-purpose flour
- 1 tsp. baking powder
- 1 tsp. salt
- 2 tsp. real vanilla
- Margarita Topping:
- Zest of 1 lime
- 1/2 cup fresh lime juice
- One 14-ounce can sweetened condensed milk (not evaporated)
- 2 Tbsp tequila
- 2 Tbsp Triple Sec
- 1-1/2 cups whipped heavy cream, divided
- 2 drops green food coloring (optional)
- 4 very thin lime slices cut in half, for garnish
DIRECTIONS
- Brownies:
- Preheat oven to 350 degrees.
- Spray a 13 x 9 inch baking pan with non-stick spray.
- Melt chocolate squares over double boiler until melted.
- Combine butter, sugar and eggs; mix until well blended.
- Set aside.
- Add chocolate and mix well.
- Combine flour, baking powder, salt,; add to chocolate mixture, mixing well.
- Stir in vanilla.
- Spread into pan.
- Bake 40 minutes; remove from oven.
- Cool thoroughly.
- Topping:
- In a clean bowl, combine lime zest, lime juice, condensed milk, tequila, and Triple Sec.
- Fold in 1 cup of the whipped cream and the food coloring.
- Pour over cooled brownies and freeze for 4 hours. Cut into 2 inch pieces and decorate with remaining 1/2 cup of whipped cream and lime slices.
- Serve.
