Margo's Mango Slaw

INGREDIENTS
- 2 cups shredded white cabbage
- 2 cups shredded red cabbage
- 1/3 cup green onions, sliced
- 1 fresh mango, peeled and cubed
- ½ cup walnuts, chopped coarsely
- Dressing:
- ¼ cup sugar
- ½ teaspoon fresh ginger, grated
- ¾ cup rice wine or cider vinegar
- Salt & pepper to taste
DIRECTIONS
- In a medium bowl, combine cabbage, green onions, mango and walnuts.
- In a small bowl whisk together the sugar, ginger and vinegar. Season with salt and pepper. Add to cabbage mixture and toss. Serve cold or at room temperature.
