Margo's Mango Slaw
  • 2 cups shredded white cabbage
  • 2 cups shredded red cabbage
  • 1/3 cup green onions, sliced
  • 1 fresh mango, peeled and cubed
  • ½ cup walnuts, chopped coarsely
  • Dressing:
  • ¼ cup sugar
  • ½ teaspoon fresh ginger, grated
  • ¾ cup rice wine or cider vinegar
  • Salt & pepper to taste
  1. In a medium bowl, combine cabbage, green onions, mango and walnuts.
  2. In a small bowl whisk together the sugar, ginger and vinegar. Season with salt and pepper. Add to cabbage mixture and toss. Serve cold or at room temperature.
