Marie's Cocoa Fudge

  • 2/3 cup of Hershey's cocoa
  • 3 cups of sugar
  • 1/8 tsp salt
  • 1 1/2 cups milk
  • 4 1/2 Tbsp butter
  • 1 tsp vanilla
  1. Combine cocoa, sugar, salt, and milk. Bring to boil, stirring frequently. Cook until a small amount of mixture forms a soft ball when dropped into cold water. Remove from heat; add butter. Cool to 110 degrees. Add vanilla and beat until mixture thickens. Pour into a buttered 8 x 8 pan. Cool and cut into squares.
This is a richer, more solid fudge. It is very easy to overcook and have a grainy consistancy. Done correctly, it is the best.
