Marinated Mushrooms

INGREDIENTS
  • 1 1/2 pounds medium-size fresh mushrooms
  • Vegetable cooking spray
  • 2 tablespoons minced garlic
  • 1/2 cup water
  • 1/3 cup red wine vinegar
  • 1 1/2 tablespoons coriander seeds
  • 3/4 teaspoon dried thyme
  • 3/4 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
DIRECTIONS
  1. Clean mushrooms with damp paper towels; trim ends from stems.
  2. Set mushrooms aside.
  3. Coat a large nonstick skillet with cooking spray; place over medium heat until hot.
  4. Add garlic; saute 2 minutes.
  5. Add water and remaining 6 ingredients, bring to a boil.
  6. Add mushrooms.
  7. Cover, reduce heat to low, and cook 20 minutes or until mushrooms are tender, stirring occasionally.
  8. Transfer mushroom mixture to a bowl; let cool. Cover and chill at least 8 hours.
  9. Drain mushroom mixture, discarding marinade.
