Marinated Peppers
INGREDIENTS
- 2 red bell peppers
- 2 green bell peppers
- 2 yellow bell pepper
DIRECTIONS
- An Italian roomate used to make these.
- Marinated Peppers
- Roast 2 red bell peppers, 2 green bell peppers, and 2 yellow bell peppers in a 450 oven for 10-15 minutes or until the skin blisters and blackens.
- Immediately transfer to a large plastic bag. Let cool. When cool, peel and core the peppers, eliminating all the seeds. Season them with 3 garlic cloves, sliced, 2 T. balsamic vinegar, 1/2 c. of EVOO. Cut into strip. Serve with toasted bread or add to sandwiches.
