Marshmallow Sweet Potato Casserole
INGREDIENTS
  • Servings: 8-10
  • 6 cups hot mashed sweet potatoes (fresh or canned)
  • 1/2 cup packed brown sugar
  • 1 1/2 tsp. ground cinnamon
  • 6 tbsp. butter, softened
  • 1 1/2 tsp. vanilla
  • 1 cup milk
  • 3/4 tsp. ground allspice
  • 1 egg
  • 1/4 tsp. ground nutmeg
  • 1/2 tsp. salt
  • 18 large marshmallows
DIRECTIONS

  2. Ingredients:

  6. 6 tbsp. butter, softened
  7. 1 ½ tsp. vanilla
  8. 1 cup milk
  9. ¾ tsp. ground allspice
  10. 1 egg
  11. ¼ tsp. ground nutmeg
  12. ½ tsp. salt
  13. 18 large marshmallows
  14. Preheat oven to 325 degrees. In a large mixing bowl, beat all ingredients except marshmallows until smooth. Transfer to a shallow, greased 2½-quart baking dish. Bake uncovered 40-45 minutes or until heated through. Top with marshmallows. Bake 5-10 minutes more or until marshmallows begin to puff and brown.
  15. OR to prepare on night before:
  16. Save the marshmallows, and place the baked dish in the fridge. On Day #2, reheat the dish in the oven, then take out, place marshmallows on top, and allow them to puff and brown in oven for 5-10 min. This is great for Thanksgiving!
