Mashed Garlic Creamy Cauliflower

  • Preparation Time: 25-30 minutes
  • 1 head of cauliflower - cut up into florets
  • 2-3 spoonfuls of minced garlic
  • 1-2 TBSP olive oil
  • 2-3 TBSP cream cheese (full fat, reduced fat, or no fat works)
  • 1/4 c parmesean cheese
  • Salt/Pepper to taste
  • Optional add-ins or substitutes:
  • Ricotta cheese or Greek yogurt for cream cheese
  • Almond milk or milk
  • To decrease calories withhold a TBSP of oil, parmesean cheese, and use fat free greek yogurt
  1. Start hearing water to bowl to steam cauliflower florets.
  2. While heating cut up cauliflower. Focus on just getting the florets.
  3. While steaming cauliflower, saute garlic in olive oil.
  4. Use a blender or food processor and gradually add ingredients to puree together. I like to put some cauliflower in first perform other ingredients.
  5. If too thick add in a little milk.
  6. Salt/pepper to taste.
  7. If making in advance just put in an oven safe dish and warm in oven at low setting until ready to eat.
A few years ago I made this for dinner along with a healthier version of salisbury steak with a mushroom sauce. I told Jack after we had started eating that it wasn't potato. He couldn't figure out what it was but kept commenting how great it was. I wasn't a huge cauliflower fan myself until I started messing around with it mashed.
