Matia's Turbo with Oven Dried Tomatoes

  • 1 pound of turbot
  • 2 cloves garlic, finely minced
  • zest of one lemon
  • fresh ground black pepper
  • chili pepper flakes
  • 16 Plum Tomatoes
  • Thyme
  • Salt
  • Cannellini beans (you can use canned or dried – preparation will vary)
DIRECTIONS
  1. Prepare the cannellini beans simply in a sautee pan with olive oil, salt and pepper and set aside
  2. Cut the tomatoes in half lengthwise, take out the seeds and season with salt and thyme
  3. Roast in the oven for 40 minutes at 375
  4. Debone the turbot and take off the skin
  5. Place the turbot skin side down in a hot fry pan with oil (even without skin this side is more resistant) and place in a 375 degree oven for 8 minutes
  6. Place the turbot on a plate and garnish with cannellini beans and tomatoes

As many of you know, the traditional Christmas Eve dinner for Italians is fish - be it the Feast of the Seven Fishes or a 13 course marathon, fish and seafood of all varieties make it to the table - baccalà (salted cod fish), pasta with seafood, marinated anchovies, shrimp cocktail and more.The desserts thankfully are fish-free. If you are a keeper of this Italian tradition, Matia's dish is a perfect (and easy) addition to the table. It is also a wonderful midweek meal as total preparation is only about 30 minutes.
