  • Ingredients (Makes (4) Entomatadas):
  • 2 large roma tomatoes
  • 1 garlic clove
  • 1/2 teaspoon of salt
  • 1 tablespoon olive oil
  • 4 large corn tortillas
  • 1/2 cup of Queso Fresco (Mexican Cheese)
  • 1 cup of Tillamook Vintage White Extra Sharp Cheddar Cheese or Monterey Jack
  • (Highly recommend the Tillamook)
  • 1/2 cup of sour cream or Crema Fresca
  • Slices of fresh avocado

On a trip to Mexico, I had my first encounter with Entomatadas. I was staying with my grandparents and the most important part of our day, was when we sat down to eat! It was about 10 pm when I had my first Entomatada, and it was glorious! The rich tomato base sauce and creamy cheese filling are incredibly indulging that it makes you want to eat 10 of them!
