Mediterranean Chicken and Wild Rice Salad
  • 8 ounces of wild rice (cooked according to directions)
  • 1 can of hearts of palm, sliced into half inch sections
  • 1 2 1/2 pound roasted chicken, boned and shredded (I buy one from the food store)
  • 1 7 oz. jar of roasted peppers drained and chopped
  • 2 bunches of arugula, chopped
  • 1/2 cup chopped green onions
  • 1/2 cup toasted walnuts (you can use pine nuts or pecans as well)
  • 3 T soy sauce
  • 3 T rice vinegar
  • 3 T dark sesame oil
  • 1 medium head romaine lettuce
  1. Cook rice according to directions.
  2. Transfer cooked rice to a large bowl nd combine with chicken, arugula, roasted peppers, hearts of palm, green onions and lettuce.
  3. Whisk soy sauce, rice vinegar, and sesame oil in a small bowl.
  4. Pour over salad and mix well.
  5. Season with salt and pepper.
This is a great dish to bring to a BBQ. It can be made the night before and just gets better over time.
