Mediterranean Chicken and Wild Rice Salad

INGREDIENTS
- 8 ounces of wild rice (cooked according to directions)
- 1 can of hearts of palm, sliced into half inch sections
- 1 2 1/2 pound roasted chicken, boned and shredded (I buy one from the food store)
- 1 7 oz. jar of roasted peppers drained and chopped
- 2 bunches of arugula, chopped
- 1/2 cup chopped green onions
- 1/2 cup toasted walnuts (you can use pine nuts or pecans as well)
- 3 T soy sauce
- 3 T rice vinegar
- 3 T dark sesame oil
- 1 medium head romaine lettuce
DIRECTIONS
- Cook rice according to directions.
- Transfer cooked rice to a large bowl nd combine with chicken, arugula, roasted peppers, hearts of palm, green onions and lettuce.
- Whisk soy sauce, rice vinegar, and sesame oil in a small bowl.
- Pour over salad and mix well.
- Season with salt and pepper.
