Mediterranean Inspired Hot Cabbage Salad and Herbed Tomatoes

  • Hot Cabbage Salad
  • 1 medium size head of green cabbage, shredded (as if for slaw)
  • 1 large red bell pepper, sliced and cut 3 or 4 timess
  • 1 large orange bell pepper, sliced and cut 3 or 4 timess
  • 3 inch piece of ginger, minced or sliced very thin
  • 5 small or 3 large garlic cloves, thinly sliced
  • 4 small carrots, grated (or thinly sliced and chopped)
  • 1/2 tsp basil
  • 1/2 tsp Herbs de Provence
  • 1/2 tsp Mrs Dash Garlic and Herbs Blend
  • 1/2 tsp Cumin
  • 1/2 tsp tumeric
  • 1/2 tsp sea salt
  • 1 tsp sweetener of choice
  • 2 tsp oil, divided
  • 1/4 cup crispy lean bacon, chopped
  • Herbed Tomatoes
  • 4 large fresh basil leaves - about 1/4 cup sliced
  • 1 minced garlic
  • 1 pinch salt
  • 1 cup fresh parsley
  • 1 tbsp cider vinegar
  • 1 tbsp balsamic vinegar
  • 1 tsp dried rosemary ( or 1 tablespoon chopped fresh)
  • 2 cups cherry tomatoes (equivalent in other types)
  1. Pour 1 tsp olive oil into large pot
  2. Turn the heat to medium, add the garlic and ginger and sauté until garlic is tender
  3. Add the carrots and peppers, stirring as it cooks
  4. Turn heat to high. Add the remaining oil.
  5. Gradually add in the cabbage, stirring and continue to add as it cooks down. When all cabbage has been added, stir to completely mix the pot. Add all of the seasonings, omitting the bacon at this time.
  6. Turn the heat to high and stir as the food cooks for about 5 minutes. Reduce the heat to medium to low and cover. Once cabbage is tender, stir in the bacon. Remove from heat and pour into a serving dish.
  7. While the cabbage is cooking, slice cherry tomatoes in half (or cube equivalent in other types)
  8. Roll and thinly slice basil leaves cross wise
  9. Chop parsley
  10. Chop rosemary, if using fresh
  11. Mix cider vinegar, balsamic vinegar, garlic and sugar in a small bowl
  12. Place tomatoes in a serving dish, drizzle with vinegar, using a large spoon turn tomatoes top to bottom so as to coat the tomatoes
  13. Sprinkle basil over tomatoes.
  14. Serve sprinkled with 1 tablespoon of Feta Cheese and additional basil, if desired
I love veggies and am always looking for ways to get more in my diet. My little pot garden of herbs are growing like weeds, so I am enjoying them. The mediterrean way of eating has always intrigued me, so I look for ways to prepare food similarly.
