Mediterranean Penne with Chicken

INGREDIENTS
  • 3 tbsp. olive oil
  • 2 lg onions (red & white)
  • 1 green or red pepper
  • 1/2 tsp oregano
  • 1/2 tsp basil
  • 2 garlic cloves
  • 2 tbsp capers
  • 1 lb cubed chicken
  • 1 lb penne pasta
  • 2 oz melted butter
  • 1/2 cup black olives
  • 4 oz feta cheese crumbled
  • 1/4 cup fresh chopped parsley
DIRECTIONS
  1. Heat oil and saute onions a peppers.
  2. Add chicken and spices and cook 10 minutes.
  3. Add salt & pepper.
  4. Cook pasta, then add butter and all ingredients.
  5. Sprinkle with parsley and serve with bread.
