Melon Pickle

INGREDIENTS
- Cooking Time: Approx 3 hours
- 5 lbs. rind
- 1/2 bottle of Lilly's Lime or 2 Tbs. slack lime
- 1/2 gallon of water (soak overnight)
- 4 Tbs of sugar
- 1 qt. of vinegar
- 2 Tbs. pickle seasoning
- 1 Tbs. of salt
DIRECTIONS
- Wash the rinds after soaking and put them in clean water.
- Let them come to a boil.
- Boil 20 minutes then drain off all the water.
- Put again into clean water and let them come to a boil.
- Drain again and add in mixed vinegar and seasonings,
- Let it boil once more and then cook for an hour.
