Mexican Cornbread

  • 1 cup cornmeal
  • 1 cup flour
  • 4 tsp baking powder
  • 3 TBLS sugar
  • 1/2 tsp salt
  • 2 eggs
  • 1 cup milk
  • 4 TBLS oil
  • 3/4 cup grated colby/jack cheese
  • 1 small can green chili or fresh jalapeno
  • 3/4 cup corn, drained
DIRECTIONS
  1. Preheat oven to 425 degrees. Preheat 10" cast-iron skillet while mixing cornbread.
  2. Beat eggs and mix with milk and oil.
  3. Combine milk/eggs with remaining ingredients.
  4. Add 2 TBLS butter to preheated skillet. After melted, add cornbread mixture.
  5. Bake for 20-25 mins or until knife comes out clean.
