Mexican green rice

  • 1 c long grain rice
  • 2 c chicken broth
  • 1 small can mild Ortega chiles diced, drained
  • 2 T roasted garlic
  • 1T canola oil
  1. puree green chiles and roasted garlic in food processor or with stick blender
  2. Pour pureed mixture into measuring cup, adding enough water to make one cup
  3. Toast rice in oil until grains are golden
  4. Add pureed green mixture and chicken broth
  5. Put in rice cooker and cook normally
I wanted to come up with another version of Mexican rice - and this goes really well with my Mexi-Cali chicken
