Michelle Losey's Cottage Cheese Custard Pie
INGREDIENTS
  • 16 oz cottage cheese
  • 3 eggs
  • 1 tsp vanilla
  • 1 tsp lemon juice
  • 12 oz evaporated milk
  • 1 1/2 cup whole milk
  • pinch of salt
  • *opt: pinch of nutmeg
  • 1 cup white sugar
  • 3 TBS cornstarch
  • Homemade or store bought pie crust
DIRECTIONS
  1. Preheat oven to 375F
  2. Strain cottage cheese for 1/2 hour or more
  3. In blender mix eggs, vanilla, lemon juice, milk and salt (opt nutmeg)
  4. Blend for a min or two
  5. Add sugar and cornstarch
  6. Blend for a min or two
  7. Put cottage cheese in bowl add blender mix and mix well
  8. Pour into pie crust
  9. Cover edges w/ tin foil
  10. Bake at 375F
