Michelle Losey's Pasta Salad
INGREDIENTS
  • Ranch dressing
  • Sour cream
  • 1 Lb Cooked pasta chill off in cold water after cooking 'till ready to use (thin spaghetti, thick spaghetti, spirals, elbows, bow ties, mini shells or linguine)
  • 1/2 Onion diced
  • 1/2 Green or yellow sweet bell pepper
  • 1 cucumber Peeled and thick sliced then cut slices in 1/4rs
  • About 5-7 whole white mushrooms chopped
  • About 5-7 Roma paste tomatoes chopped (or any paste tomato)
  • A few shakes garlic powder
  • Cheddar Cheese cubes or shredded
  • *Opt: Croutons
  • *Opt: 1 stalk celery
  • *Opt: baby spinach leaves stems removed
  • *Opt: yellow mild peppers
  • *Opt: Chickpeas
  • *Opt: 1/2 - 1 can of lima or butter beans
  • *Opt: Meat cooked and chopped into bite size pieces (Chicken, Pork, Beef, Atlantic Salad shrimp, Ham, Kielbasa, Pepperoni, those round jerky type sticks, Bacon, Sausage links ect)
  • *Opt: Activia yogurt adds health benefits but not needed for salad
DIRECTIONS
  1. Put pasta in large bowl
  2. Add Onions, peppers, cucumbers, mushrooms, tomatoes, garlic powder and cheese (add optional veggies here) mix well
  3. Add optional meat here and mix well
  4. Mix equal amount of dressing and sour cream (or all ranch if someone don't like sour cream)
  5. Serve over a handful of croutons if using them (I do)
