Microwave Bacon Topped Cheese Soup

INGREDIENTS
  • 6 slices of bacon, chopped
  • 1/2 cup of finely chopped celery
  • 1/2 cup of finely chopped carrot
  • 1/2 cup of finely chopped onion
  • 1/2 cup of finely chopped green pepper
  • 1/3 cup of all-purpose flour
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 2 cup of Half-and-half
  • 1 cup of milk
  • 1 - 14 ounce can of clear chicken broth
  • 2 cups of shredded cheddar cheese
DIRECTIONS
  1. Place bacon in a 3 qt. casserole; cover and microwave at
  2. HIGH 6 to 9 minutes or until done. Remove bacon with a
  3. slotted spoon, reserving drippings in casserole; set bacon
  4. aside.
  5. Add vegetables to drippings; microwave at HIGH 6 to 8 minutes
  6. or until tender. Blend in four, salt, and pepper; stir well.
  7. Gradually stir in half-and-half, milk, and chicken broth.
  8. Cover and microwave at HIGH 7 to 11 minutes or until thickened
  9. and bubbly, stirring at 2 minute intervals. Add cheese,
  10. stirring until melted. Cover and microwave at MEDIUM 2 minutes.
  11. Top each serving with bacon.
