Microwave Pumpkin Turkey Stew
INGREDIENTS
- Cooking Time: 45
- 2 T butter or margarine
- 1 med onion sliced
- 1 stalk of celery
- 3 cooked carrots - sliced
- 2 cooked potatoes - sliced
- 2 c cubed turkey - cooked
- 1 c milk
- 1 c sour cream
- 1 t mustard or curry
- 1/2 t salt
- 1/2 t crushed basil
- 1/4 t pepper
- 1 medium pumpkin
DIRECTIONS
- Combine butter, onion and celery in 3 qt casserole. Cover and microwave 4 - 6 minutes on high until tender crisp. Combine remaining ingredients except pumpkin. Cover and microwave 15 to 20 minutes on high until hot. Stir half way through.
- Clean pumpkin. Spoon stew into pumpkin and cover with top. Place pumpkin on microwave dish 15 to 20 minutes on high until pumpkin is soft.
- Serve with cornbread.
