Microwave Pumpkin Turkey Stew
INGREDIENTS
  • Cooking Time: 45
  • 2 T butter or margarine
  • 1 med onion sliced
  • 1 stalk of celery
  • 3 cooked carrots - sliced
  • 2 cooked potatoes - sliced
  • 2 c cubed turkey - cooked
  • 1 c milk
  • 1 c sour cream
  • 1 t mustard or curry
  • 1/2 t salt
  • 1/2 t crushed basil
  • 1/4 t pepper
  • 1 medium pumpkin
DIRECTIONS
  1. Combine butter, onion and celery in 3 qt casserole. Cover and microwave 4 - 6 minutes on high until tender crisp. Combine remaining ingredients except pumpkin. Cover and microwave 15 to 20 minutes on high until hot. Stir half way through.
  2. Clean pumpkin. Spoon stew into pumpkin and cover with top. Place pumpkin on microwave dish 15 to 20 minutes on high until pumpkin is soft.
  3. Serve with cornbread.
