Mildred's Chicken Casserole

INGREDIENTS
  • 8 chicken breasts, boiled and cubed
  • 1 c. uncooked rice
  • 2 1/2 chicken broth
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 10 oz. cream of chicken soup
  • 3 T marg.
  • 1 c. sour cream
  • 8 oz. water chestnuts, drained and chopped
  • 1 1/2 cup cheddar cheese
  • 1 roll of Ritz crackers, crushed
  • salt and pepper to taste
  • dash of paprika
DIRECTIONS
  1. Saute onions and celery in marg. until tender.
  2. Cook rice in chicken broth. Mix all but Ritz and paprika.
  3. Place in a Pam-sprayed 9 x 13 pan.
  4. Top with Ritz crumbs and paprika
  5. Bake 350 30 to 45 min. Serves 8
