Millie's Mango Black Bean Tacos
INGREDIENTS
  • Cooking Time: 5-7 (if crisping tacos)
  • Servings: 3 (2 tacos each)
  • Preparation Time: 15
  • Main 5:
  • 1 mango, peeled and cubed
  • 1 cup black beans, drained
  • 1/2 cup red onion
  • 1/2 cup walnuts, chopped
  • 6 corn tortillas
  • Pantry Items & Extras:
  • Salt & pepper
  • Other spices of choice (Taco seasoning, Chili powder, etc.)
  • *Lime juice, optional
DIRECTIONS
  1. 1. Mix all your ingredients (minus the tortillas, of course) and head to your pantry to throw in some of your favorite spices. Taco seasoning is a super easy way to quickly add TONS of flavor. I personally also like to add a touch of chili powder for heat and squeeze some fresh lime juice for a nice citrus kick.
  2. 2. And again, I love a little crunch so I lightly crisped up my tortillas in a frying pan with just a touch of olive oil.
  3. 3. Fill your tacos with your mixture and enjoy!
