Mini Cheesecakes with Fresh Strawberries

  • 2 8 oz. packages of cream cheese, softened
  • 1 t. vanilla
  • 3/4 c. sugar
  • 2 eggs
  • GF vanilla wafers (homemade or store bought)
  1. Beat cream cheese until smooth. Add sugar, eggs, and vanilla. Beat until fluffy. Put cupcake liners in muffin pan. Place a GF vanilla wafer in bottom of each cupcake liner. Fill each hole 3/4 full. Bake in an oven preheated to 350F for 15-20 minutes until knife comes out with moist crumb. Cool to room temperature. Chill. Top with fresh strawberry sauce if desired and whipped cream before serving.
This is a great recipe to take to picnics and potlucks. A wonderful spring and summertime treat.
