Mini Cheesecakes with Fresh Strawberries

- 2 8 oz. packages of cream cheese, softened
- 1 t. vanilla
- 3/4 c. sugar
- 2 eggs
- GF vanilla wafers (homemade or store bought)
DIRECTIONS
- Beat cream cheese until smooth. Add sugar, eggs, and vanilla. Beat until fluffy. Put cupcake liners in muffin pan. Place a GF vanilla wafer in bottom of each cupcake liner. Fill each hole 3/4 full. Bake in an oven preheated to 350F for 15-20 minutes until knife comes out with moist crumb. Cool to room temperature. Chill. Top with fresh strawberry sauce if desired and whipped cream before serving.
