Mini Chocolate Cream Cheese Cupcakes

  • Chocolate Cake Base:
  • 1 1/2 cups flour, sifted
  • 1 cup sugar
  • 1/4 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup water
  • 1/3 cup canola oil
  • 1 Tablespoon white vinegar
  • Chocolate Chip Cream Cheese Mixture:
  • 1 (8 ounce) package cream cheese, softened
  • 1 egg
  • 1/3 cup sugar
  • 1 teaspoon vanilla
  • 1 (12 ounce) bag mini chocolate chips
  1. Preheat oven to 350 degrees
  2. In a large bowl, mix together the flour, sugar, cocoa powder, baking soda, and salt. Then add the water, oil, and vinegar and mix until smooth.
  3. In a medium bowl, beat together the cream cheese, egg, sugar, and vanilla until smooth. Then fold in the mini chocolate chips.
  4. Line mini cupcake pans with cupcake liners.
  5. Fill the mini cupcake pans halfway with the chocolate cake mixture.
  6. Spoon 1 teaspoon of the cream cheese chocolate chip mixture on top of the chocolate cake mixture.
  7. Bake for 20 minutes, or until the cakes are set and the cream cheese turns light golden.
  8. Cool the pans on wire racks for 10 minutes and then remove the cupcake from the pans and cool completely before serving.
