Mini Frozen Strawberry Cheesecakes

INGREDIENTS
- 12 tablespoons honey graham cracker crumbs
- 1 envelope unflavored gelatin
- 1/4 cup cold milk
- 2 tubs (8 oz. each) light strawberry spreadable cream cheese
- 2 packets sweet and low sugar substitute
- 1 teaspoon vanilla
- 1/2 cup milk
- sliced strawberries
DIRECTIONS
- Sprinkle 1 tablespoon graham crumbs in each of 12 large muffin papers and set aside. Add 1 envelope unflavored gelatin to 1/4 cup cold milk. Let soften 5 minutes.
- Beat cream cheese with sugar substitute and vanilla.
- Beat in gelatin mixture and 1/2 cup milk. Pour into muffin cups. Freeze overnight. Remove muffin papers, invert and serve with sliced strawberries.
