Mini Frozen Strawberry Cheesecakes

INGREDIENTS
  • 12 tablespoons honey graham cracker crumbs
  • 1 envelope unflavored gelatin
  • 1/4 cup cold milk
  • 2 tubs (8 oz. each) light strawberry spreadable cream cheese
  • 2 packets sweet and low sugar substitute
  • 1 teaspoon vanilla
  • 1/2 cup milk
  • sliced strawberries
DIRECTIONS
  1. Sprinkle 1 tablespoon graham crumbs in each of 12 large muffin papers and set aside. Add 1 envelope unflavored gelatin to 1/4 cup cold milk. Let soften 5 minutes.
  2. Beat cream cheese with sugar substitute and vanilla.
  3. Beat in gelatin mixture and 1/2 cup milk. Pour into muffin cups. Freeze overnight. Remove muffin papers, invert and serve with sliced strawberries.
