Mini Meatballs
  • 1 pound ground turkey
  • 3 slices bacon finely chopped
  • 1/4 cup chopped fresh parsley
  • 3 garlic cloves, minced
  • 3 tablespoons grated Parmesan cheese
  • 1 tablespoon dried breadcrumbs
  • 1 large egg
  • 1/8 teaspoon ground nutmeg
  • course salt and ground pepper
  1. In a large bowl, combine turkey, bacon, parsley, garlic, cheese, breadcrumbs, egg, nutmeg, 1/2 teaspoon salt and 1/4 teaspoon pepper.
  2. Shape mixture into about 40 small meatballs.
  3. Arrange in a single layer on a baking sheet. Freeze 1 hour.
  4. Once frozen, transfer to an airtight container or resealable plastic bag.
  5. Can keep frozen up to 3 months.
  6. To cook frozen meatballs, preheat oven to 400 degrees.
  7. Bake 15 minutes. (Check for doneness as oven temperatures may vary).
  8. This is a wonderful recipe that I've made several times.
  9. You can use lean ground beef but I prefer turkey as the healthier choice.
  10. I've tried this recipe with ground chicken but the meatballs were a little dry.
  11. Use the meatballs as finger food or to make spaghetti and meatballs, to top pizzas or in soup.
I'm really into make ahead foods. It's great when you've had a tiresome day, long for a homecooked meal and most of the work is already done. Freeze Meatballs and use for many dishes! Recipe is from Everyday Food magazine with some slight modifications. They're delicious!
