Mini Mexican Roast Beef Casserole:
  • 1/4 lb. chipped deli roast beef slices (chopped finely in pan sprayed w/ Pam)
  • 2 T finely minced onions
  • 1 T. minced garlic/or garlic powder
  • 1/2 c. salsa
  • 1/2 c. corn
  • 1/2 chopped tomato
  • 1/4 c. cilantro (optional)
  1. Sauté onions in skillet sprayed w/ Pam. Add chipped deli roast beef
  2. finely chopped. Cook for 3 min. on med. heat. Add garlic, salsa, corn,
  3. tomato. Let simmer for 5 min. Salt/pepper can be added to taste.
  4. Cilantro chopped to 1/4 c. is optional.
  5. Measure serving size to amt. that you are allowed. Top w/ low fat sour
  6. cream. GOOD!!
  7. The rest can be frozen in individual size portions for later use!
