Mississippi Mud Cake

  • 2 cups sugar
  • 2 sticks butter
  • 4 eggs
  • 1 1/2 cup plain flour
  • 1/2 cup cocoa
  • 1 1/2 cup chopped nuts
  • dash salt
  • 1 tsp vanilla
  • 1 3.5 oz can coconut
  • miniature marshmallows
  • Icing:
  • 1 box confectioners sugar
  • 1/3 cup cocoa
  • 1/2 tsp vanilla
  • 6 Tbsp milk
DIRECTIONS
  1. Cream sugar and butter together. Add eggs and blend well. Add remaining ingredients and mix well. Pour into a greased and floured 13 x 9 inch pan. Bake at 350 35 minutes. When done, immediately cover top of cake with marshmallows. Do not remove cake from pan. Pour icing over marshmallows after cake cools.

  3. Sift sugar and cocoa together. Add other ingredients and blend well. Pour over marshmallows. Swirl frosting over marshmallows.
