Mocha Meringue Bites

  • 3 large egg whites
  • dash of salt
  • 1/2 cup granulated sugar
  • 1 Tbsp instant coffee
  • 1/2 tsp vanilla extract
  • 1/2 cup mini chocolate chips
  1. Preheat oven to 300 degrees. Beat egg whites with salt on high speed for 1 minute. Mix sugar and coffee. Add 1 Tbsp of sugar mixture at a time, beating about 3 minutes more til stiff peaks form. Beat in vanilla. Fold in chocolate chips. Drop by teaspoon onto a baking pan lined with Reynold's parchment paper. Bake for 30 minutes. Cool.
