Mocha Pound Cake

INGREDIENTS
  • 2/3 cup shortening
  • 2c. sifted cake flour
  • 1 1/4c. sugar
  • 1 Tblsp. instant coffee
  • 1 tsp. salt
  • 1/2 tsp. cream of tartar
  • 1/4 tsp. baking soda
  • 1/2c. water
  • 1 tsp. vanilla
  • 3 eggs
  • 2-1oz. sq. unsweetened chocolate, melted
  • powdered sugar
DIRECTIONS
  1. Stir shortening to soften.
  2. Stir in cake flour, sugar, instant coffee, salt,
  3. cream of tartar & baking soda.
  4. Add water & vanilla;
  5. Mix until flour is dampened.
  6. Then beat vigorously 2 min.
  7. Add eggs & 2-1oz. sq. unsweetened chocolate, melted;
  8. Beat 1 min. longer.
  9. Pour into waxed paper-lined 9 1/2 x 5 x 3 in. loaf pan.
  10. Bake in slow oven (325 deg.) about 65 to 70 min., or until done.
  11. Cool in pan 10 min.; remove.
  12. When thoroughly cool, sift powdered sugar over top.
