Moist Bananaana Bread
  • Servings: 2 loafs, 24 reg. muffins
  • 3 eggs
  • 1 c. vegetable oil
  • 2 c. sugar
  • 3-4 mashed overly ripe bananas
  • 3 tsp. vanilla extract
  • 1 tsp. salt
  • 1/4 tsp. baking powder
  • 3 tsp. cinnamon
  • 1 tsp. baking soda
  • 3 c. all-purpose flour
  • 2 c. chocolate chips (optional)
  1. Preheat oven to 325.
  2. Spray 12-24 regualr muffin tins, or two 1 lb. loaf pans with non-stick cooking spray.
  3. In a large bowl, beat eggs until light and frothy. Mix in the oil and sugar. Stir in the bananas and vanilla.
  4. Combine the flour, salt, baking soda and powder, cinnamon, and salt. Pour the flour mixtre into the egg mixture and mix until combined. Add chocolate chips if using.
  5. Divide the batter between the two muffin tins, or the two loaf pans. Bake for 20-25 min for muffins, or 50-65 min. for a loaf, or until a toothpick inserted in the center comes out clean.
I have been looking for THE BESTEST banana bread recipe that can hold form in both a loaf, and in muffins. I really really really LOVE when I saw this one that called for 4 bananas! I was like! Yessss, i think i may have found the banana bread I was looking for. Now...three recipes down...i have found THE ONE!!! (at least I think so)
