Moist Bananaana Bread

INGREDIENTS
- Servings: 2 loafs, 24 reg. muffins
- 3 eggs
- 1 c. vegetable oil
- 2 c. sugar
- 3-4 mashed overly ripe bananas
- 3 tsp. vanilla extract
- 1 tsp. salt
- 1/4 tsp. baking powder
- 3 tsp. cinnamon
- 1 tsp. baking soda
- 3 c. all-purpose flour
- 2 c. chocolate chips (optional)
DIRECTIONS
- Preheat oven to 325.
- Spray 12-24 regualr muffin tins, or two 1 lb. loaf pans with non-stick cooking spray.
- In a large bowl, beat eggs until light and frothy. Mix in the oil and sugar. Stir in the bananas and vanilla.
- Combine the flour, salt, baking soda and powder, cinnamon, and salt. Pour the flour mixtre into the egg mixture and mix until combined. Add chocolate chips if using.
- Divide the batter between the two muffin tins, or the two loaf pans. Bake for 20-25 min for muffins, or 50-65 min. for a loaf, or until a toothpick inserted in the center comes out clean.

I have been looking for THE BESTEST banana bread recipe that can hold form in both a loaf, and in muffins. I really really really LOVE bananas...so when I saw this one that called for 4 bananas! I was like! Yessss, i think i may have found the banana bread I was looking for. Now...three recipes down...i have found THE ONE!!! (at least I think so)
