Mom's Meyer Lemon squares

  • 1/2 c powdered sugar
  • 1/4 t salt
  • 2 c flour
  • 1 c butter
  • 3/4 c sugar
  • 1 t baking powder
  • 1/4 t salt
  • 4 eggs, slightly beaten
  • 4 T meyer lemon juice
  • 2 T dried lemon peel
  • glaze
  • 2 T meyer lemon juice
  • 1/2 c powdered sugar
  • 2 T butter
DIRECTIONS
  1. With pastry cutter, mix together 1/2 c powdered sugar, salt, flour, and butter
  2. press mixture into a 9x12 pan
  3. Bake for 15 minutes at 350 degrees
  4. Mix together sugar, baking powder, salt, eggs, 4 T lemon juice and lemon peel
  5. Pour mixture into baked crust and bake for another 20 minutes at 350 degrees.
  6. Let cool
  7. Prepare glaze by blending lemon juice, powdered sugar and butter over low heat in saucepan until butter is just melted, then pour over pan.
  8. Let glaze set completely, then cut into squares

These are some of the best lemon squares I have ever had - so I changed very little about them
