Mom's Banana Bread

  • 1/4 cup brown sugar, packed
  • 1/2 cup butter, softened
  • 2 eggs, lightly beaten
  • 1 cup mashed bananas (approx. 3 overripe bananas)
  • 3 Tablespoons milk (or plain yogurt)
  • 1 Tablespoon fresh lime juice (optional)
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 2 cups white flour
  • 1 teaspoon baking powder
DIRECTIONS
  1. Preheat oven to 350 and butter a 9x5x3 loaf pan.
  2. In a large mixing bowl, cream the sugar and butter.
  3. Stir in the eggs, bananas, milk or yogurt, and lime juice.
  4. Add salt and ginger and mix well.
  5. Sift the flour and baking powder together in separate bowl.
  6. Add dry ingredients to wet ingredients and mix until smooth.
  7. Pour batter into buttered loaf pan.
  8. Bake for 1 hour, or until knife inserted in center comes out clean.
  9. Cool bread for 10 mins before removing from pan.
