Mom's Carrot Casserole

  • 2 pounds carrots, sliced
  • 1/2 cup stick butter, divided
  • 6 ounces American cheese, shredded
  • 1/4 teaspoon dill weed
  • 1/2 cup saltine crackers, crushed (about 15 crackers)
  1. Preheat over to 350 degrees.
  2. Boil carrots until tender.
  3. Place carrots in a greased 1.5 quart casserole dish.
  4. Melt 1/4 cup of butter and cheese in a saucepan.
  5. Add dill weed to cheese mixture.
  6. Pour cheese mixture over carrots and stir lightly.
  7. In a seperate bowl, toss crackers and remaining melted butter to make a crunchy topping.
  8. Sprinkle cracker mixture over carrots.
  9. Bake for 25-30 minutes.
