Mom's Carrot Casserole

- 2 pounds carrots, sliced
- 1/2 cup stick butter, divided
- 6 ounces American cheese, shredded
- 1/4 teaspoon dill weed
- 1/2 cup saltine crackers, crushed (about 15 crackers)
DIRECTIONS
- Preheat over to 350 degrees.
- Boil carrots until tender.
- Place carrots in a greased 1.5 quart casserole dish.
- Melt 1/4 cup of butter and cheese in a saucepan.
- Add dill weed to cheese mixture.
- Pour cheese mixture over carrots and stir lightly.
- In a seperate bowl, toss crackers and remaining melted butter to make a crunchy topping.
- Sprinkle cracker mixture over carrots.
- Bake for 25-30 minutes.
