Mom's Easter Lamb
  • one leg of lamb (thawed)
  • 1 or 2 large cans of crushed tomatoes
  • salt and pepper
  • garlic, onions, green peppers chopped
  1. preheat oven to 350C. remove all fat from meat. in a large oven safe pot with lid place lamb, add salt, pepper, garlic, onions and green peppers. add crushed tomatoes enough so that they cover at least half the lamb. put in oven and cook for about an hour or two. be sure to turn the lamb at least twice.
My mom has been making this lamb at Easter time for years. We only wish she could make it more often.
