Mom's Prime Rib
  • 3-rib standing rib roast (varies from 4 to 7 pounds)
  • 3 garlic cloves, slivered
  • 2 lemons, juiced
  1. 1. Preheat oven to 350 degrees.
  2. 2. Place roast fat side up in shallow roasting pan (do not place on wire rack). Make deep slits about 1½-
  3. inches apart all over meaty portion of roast. Insert a garlic sliver deep into each slit (may need to sliver
  4. more garlic, but that’s not a bad thing). “Spread out” each slit and add a little lemon juice to the slits then
  5. bake uncovered for 1 hour. Reduce oven to 325 degrees and bake until internal temperature reaches 140
  6. degrees for rare, 150 degrees for medium-rare, or 160 degrees for medium.
