Mom's Rice Custard

INGREDIENTS
  • 2 c. milk
  • 1 c. cooked rice
  • 2 egg yolks (reserve whites)
  • 1/2 c. sugar
  • 1/4 tsp. salt
  • 1 c. raisins (optional)
  • 2 egg whites, beaten stiff
  • 1/2 - 1 tsp. vanilla
DIRECTIONS
  1. Heat in a double boiler:
  2. 2 c. milk
  3. 1 c. cooked rice
  4. In a large bowl,beat until smooth:
  5. 2 egg yolks (reserve whites)
  6. 1/2 c. sugar
  7. 1/4 tsp. salt
  8. Stir in 1 c. raisins (optional)
  9. Slowly add the heated milk & rice
  10. to the egg mixture. Pour back into
  11. double boiler and cook until thick.
  12. Fold in:
  13. 2 egg whites, beaten stiff
  14. 1/2 - 1 tsp. vanilla
  15. Serve warm or cold.
