Mom’s Bean Dip

INGREDIENTS
  • 2 large cans or 4 small cans refried beans
  • 3 large (or 4 small) avocados
  • 2 tablespoons lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon crushed black pepper
  • 8 oz sour cream
  • ½ cup mayonnaise
  • 1 package taco seasoning
  • 1 cup chopped green onions
  • 2 medium tomatoes, chopped
  • 1 can sliced black olives
  • 8 oz grated sharp cheddar cheese
DIRECTIONS
  1. Avocado mix – mash avocados.
  2. Mix avocados with lemon juice, salt and pepper, set aside.
  3. Sour Cream Mix – Mix sour cream, mayonnaise and taco seasoning, set aside.
  4. Warm refried beans.
  5. Layer bean dip as follows: refried beans, avocado mix, sour cream mix, onions, tomatoes, olives and then cheese.

I remember this bean dip from many a party growing up. It was always a big hit!
