Monterey Jack Chicken
INGREDIENTS
- Cooking Time: 20-25
- 3 boneless skinless chicken breasts
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 tsp. parsley
- 1/2 tsp. Mrs. Dash original seasoning
- 3 pcs. of Monteray Jack cheese sliced
- 2-3 inches by 1-1/2 inches
- 2 eggs, beaten
- 1/2 c. flour
- 1 c. plain bread crumbs
- 3 Tbl. butter
- 3 Tbs. olive oil
DIRECTIONS
- Place chicken breast in between plastic wrap and
- beat to 1/4 inch thin. (The thinner the easier to roll)
- Mix together salt, pepper, parsley and Mrs. Dash.
- Sprinkle on both sides of each chicken breast. Place a piece of cheese on breast and roll up, tucking in ends. Dip in egg then flour and then bread crumbs.
- Place in refrigerator for at least 30 minutes.
- Preheat oven to 375 degrees.
- Melt butter and olive
- oil in a large skillet. Cook chicken until golden
- brown on both sides.
- Place in a 9 x13 inch baking dish and cook for 20 -25 minutes until juices run clear.
