Moosewood Burritos

INGREDIENTS
- 5 cps pinto or kidney beans (cooked)
- 4-5 cloves of garlic
- 4 cps chopped onion
- 3 green peppers
- 1 1/2 tsp cumin
- 1/4 tsp cayenne
- 1 TB coriander seeds
- 1 cp corn
- cheese - is desire
- wheat or corn tortillas
- some oil
DIRECTIONS
- Drain beans and reserve liquid.
- Saute onions and garlic until translucent.
- Add peppers and spices. Cook until tender.
- Cover and set aside.
- Smash beans with a potato smashed or pestle. use reserved liquid to attain consistency of mashed potatoes.
- Take a serving of beans, veggies, and cheese. Wrap in tortilla.
- Place in an oiled pan.
- Bake at 400 for 15 minutes.
