Moosewood Burritos

INGREDIENTS
  • 5 cps pinto or kidney beans (cooked)
  • 4-5 cloves of garlic
  • 4 cps chopped onion
  • 3 green peppers
  • 1 1/2 tsp cumin
  • 1/4 tsp cayenne
  • 1 TB coriander seeds
  • 1 cp corn
  • cheese - is desire
  • wheat or corn tortillas
  • some oil
DIRECTIONS
  1. Drain beans and reserve liquid.
  2. Saute onions and garlic until translucent.
  3. Add peppers and spices. Cook until tender.
  4. Cover and set aside.
  5. Smash beans with a potato smashed or pestle. use reserved liquid to attain consistency of mashed potatoes.
  6. Take a serving of beans, veggies, and cheese. Wrap in tortilla.
  7. Place in an oiled pan.
  8. Bake at 400 for 15 minutes.
